Ingredients
1 pnd pork, a little fatty cubed
10 sjalots
7 chilis
15 birdseye chilis
1 tomato, skinned
2 slices ginger, 1 inch thick
2 lemongrass stalks
5 tbsp oil
7 lemon leaves
1 tsp sugar
salt or bouillon cube to taste
Preparation
Pound sjalots, chilis and tomato to a paste in a mortar.
Clean lemongrass and crush the bottom part.
Heat oil in a pan and fry paste for a few minutes, add meat, lemon leaves, ginger and lemongrass.
Let simmer for at least 15 minutes, but preferably longer for enhanced flavour.
Serve as part of a rijsttafel (various indonesian dishes).
