Ingredients
1 pnd lean beef, cubed
20 birdseye chilis, minced
3 sjalots, minced
1 pce ginger about 1"
1 pce kunyit aobut 3/4"
1 pct laos (galangal) 1"
2 tsp ground coriander seeds
1 tsp ground cumin
5 cloves
1 stalk lemongrass, cleaned and crushed
2 cups thin coconut milk
1 cup thick coconut milk
3 tbsp roasted, grated coconut
5 tbsp oil
4 lime leaves
1 stick cinnemon
1 tsp tamarind
salt to taste
Preparation
Pound chilis, shalots, ginger, kunyit, laos, corianderseeds, cumin, cloves to a paste.
Saute paste until golden, add lemongrass, limeleaves, meat, cinnemon and salt.
Add 1 cup thin milk and simmer until meat softens. If needed add more coconutmilk. Keep stirring, simmering until meat is soft and most fluid is gone.
Then add thick milk and roasted coconut, take out cinnemon and simmer until its almost dry and the oil starts to come out.
Serve with rice.
