Ingredients
For the Boemboe
2 onions, chopped
2 cloves garlic, minced
6 chilis, seeds removed, chopped
1 inch laos/galangal root, grated
1 tbsp kemiri paste (or a few kemiri nuts)
1/2 tsp ground cilantro seeds
pinch cumin
1 pce trassi (dried shrimp paste), 1/4 inch
1/2 pnd beef, cubed
1 cup beef stock
2 salam leaves (indonesian bay leaf)
1 slice galangal, 1/8 inch
2 cups coconut milk
1/4 pnd green beans
1 eggplant, sliced
1/4 pnd chinese cabbage, cut up
1 can bamboo shoots
2 tbsp deepfried sjalots
salt to taste

Preparation
Prepare boemboe bij grounding all ingredients in a mortar to a paste.
Fry boemboe in some oil for about 5 mins. Then add beef, stock, salam and galangal and water until the meat is just covered. Bring to a simmer and let it simmer for about 15 minutes. Add beans and simmer for 5 mins, add eggplant, cabbage and bamboo. Bring to taste with salt, sugar and lemonjuice.
Serve with rice sprinkled with deepfried sjalots.
