Recipe for twice cooked beef, thinly sliced then first cooked and then deepfried and tossed with a spicy sauce.

1 pnd beef, slightly fatty
10 lime leaves
10 tbsp oil
5 red chilis, chopped
7 shallots, chopped
2 cloves garlic, chopped
2 pcs galangal, 1 inch each,
1 tomato, skinned
10 birdseye chilis, chopped
1 tsp sugar
1 tbsp limejuice
Preparation
Slice beef thinly in small patties. Blanche these with water with 5 lime leaves in simmering water for about 1 hour.
Take out and drain, maybe flatten with meat hammer if too thick.
Heat oil and fry meat until crisp.
Make a paste of chilis, garlic and shallots. Clean galangal and chop.
Heat some oil and saute this with lime leaves, sugar and salt until fragrant. Then add tomato untill dissolved and limejuice.
Toss sauce with meat and serve with rice.
