Recipe for spicy pork, use leaves from the papaya or if you can't get that use kale or endivy.

Ingredients
1/4 pnd pork, in bitesize pieces
1/2 pnd papayaleaves, cleaned
salt
7 shallots, chopped
3 cloves garlic, chopped
1 pce ginger, about 2"
2 stalks lemongrass
7 birdseye chilis, chopped
1 tsp shrimppaste
2 tbsp oil
Preparation
Prepare boemboe by pounding chilis, shallots, ginger, garlic, shrimppaste in a mortar to a paste.
Heat oil in wok and saute meat until browned. Add boemboe, lemongrass and saute for a few minutes, add 1/2 cup water and papayaleaves. Bring to a simmer and add salt to taste.
Serve with rice.
