Ingredients

1 chicken, about 2 pnds

Boemboe
7 sjalots
1 pc kencur 1 inch
1 pc kunyit 2 inch (yellowroot)
1 pc laos/galangal, 1 inch
5 birds eye chilis
2 sticks lemongrass, outer stalks removed
7 kemirienuts
3 tbsp palm sugar
2 tbsp salt

5 tbsp oil
3 salam (or bay) leaves

Preparation

Clean chicken and cut open cavity, to butterfly chicken.

Prepare boemboe by cleaning all ingredients and blending tem in machine.

Saute boemboe in oil with salam for a few minutes then let it cool.

Preheat oven to 180C.

Rub chicken with boemboe inside and out and roast chicken in oven on roasting tray. Turn regularly to crispen skin a little.
