Ingredients
1 chicken, about 2 pounds
1 stalk of lemongrass
3 salam leaves
3 cups of coconutmilk
salt to taste
Herb mixture (boemboe)
7 sjalots
3 cloves of garlic
1 slice of ginger (1 in.)
1 slice of kunyit (0,8 in.)
1 slice of galangal (1 in.)
3 tsp ground koriander
1 tsp gr. cumin
7 kemirinuts
1 tsp sugar
salt to taste
5 tbsp veg. oil
Preparation
Clean the chicken. Smash the bottom of the lemongrass.
Clean everything for the herbmixture and grind it in a mortar/blender.
Fry the mixturen in the oil, about 3 mins. Add the chicken, lemongrass, salamleaves and fry another 5 mins.
Add coconutmilk and salt to taste and simmer for about 30 mins until the chicken is done.
Take out of pan and cool. Roast on bbq until crisp.
