Ingredients

1 chicken, 3 pounds
5 sjalots
3 cloves of garlic
5 birdseye chilis
1 pce kunyit, 1 inch
1 pce galangal, 2 inch
1 pce kencur, 1 inch

1/2 tsp white pepper
1/2 tsp black pepper
9 kemirinuts
1 stalk lemongrass, bottom smashed
3 tbsp vegetable oil
3 salam leaves
3 cups coconutmilk
1 tbsp palmsugar
salt to taste

Preparation

Cut up chicken.

Clean, peal, chop sjalots, garlic, kencur, kunyit, kencur, kemirinuts, chilis. Grind to a paste.

Fry paste until fragrant. Add lemongrass, salam leaves and chicken. Fry for about 2 mins, add sugar, coconutmilk and salt to taste. Leave to simmer for about 45 mins.
