Ingredients

Pico de Gallo
2 medium, ripe tomatos, chopped
1 red onion, chopped
2 tbsp chili, minced
2 tbsp cilantro, chopped

Guacamole
2 small or 1 large Haas Avocado
2 tbsp sour cream
1 small tomato, chopped
1/2 tsp chili, minced
1/4 tsp cilantro, chopped
1/4 tsp lemonjuice
1/8 ts[ salt

Chili Queso
1/4 pnd beef mince
1 tsp flour
pinch of salt
pinch of pepper
1 pnd grate cheese, cheddar/monterey jack
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp paprika

2 pnds beef mince
4 large hamburger buns
1/4 head iceberg lettuce, shredded
2 tbsp mayonaise
1 spring onion, chopped
16-20 tortilla chips
2-3 fresh chilis or jalapenos from a jar

Preparation

Prepare Pico de Gallo by tossing all ingredients together. Keep chilled in the fridge.

For the guacamole mash avocado roughly add the other ingredients and mix well. Extra salt and pepper to taste.

For the Chili Queso, mix beef mince with flour, salt, pepper and chili powder. Fry mince until loos and done about 5 mins. Take out and keep separate.

Melt cheese with 2 tbsp milk on low heat, when well melted add other ingredients, stir until smooth. Add mince and stir wel. Keep separate.

Form hamburgers from the beef and grill burgers until done.

Then build your burger by layering:

Bottom bun, lettuce, hamburger, 2 tbsp chili queso, 4-5 crumbled chips, 2 tsp spring onion.

On top bun, 1/2 tbsp mayonaise, 2 tbsp pico de gallo, 2 tbsp guacamole, 4 slices chili/jalapeno.

Yes this burger is served open face. Serve with extra chili queso, guacamole and use the chili queso as a dip for some fries.
