Ingredients
4 tbsp oliveoil
1/4 pnd chickenbreast, in strips
1/2 tsp salt
1/8 tsp black pepper
1 tsp oregano
2 small ripe tomatos, seeded, skinned and chopped
3 ounces salami, cubed
1 tsp minced garlic
1/4 cup white wine
1/4 pnd of your favorite pasta, cooked
1 tbsp butter
3 tbsp chopped spring onion
2 tbsp grated parmesan
1 tsp chopped parsley
Preparation
Heat a wok, add oil until just about smoking. Stirfry chicken and season with salt, pepper and oregano until it turns opaque. Add tomatoes and salami, saute another minute. Add garlic, make sure the garlic doesn't burn. Add wine and reduce a little. Season again if needed, then toss with the pasta. Finally add the butter and spring onion, toss again to mix well.
Serve sprinkled with parsley and parmesan.
