This recipe for a tuna steak sandwich is great, very mediteranean with the roasted vegetables.

Ingredients
1 cup olive oil
2 tbsp olive oil
3 tbsp fresh oregano, chopped
3 tbsp balsamic vinegar
2 cloves garlic, minced
3 small eggplants, pealed and cut 1/4" slices
2 zucchinis, 1/4" slices
1 yellow bell pepper, in strips
8 thick slices Italian rustic bread
4 tuna steaks, 1/4 pnd each
some extra oregano
some arugula
Preparation
Cover vegetables in oil and sprinkle with oregano and salt and pepperl. Grill vegetables in grill pan or on bbq. Als grill bread slices, brushed with oil. When done drizzle with balsamic vinegar and toss to coat.
Grill tuna until rare in the middle, about 1 minute per side, season with salt and pepper and oregano.
Serve sandwich open face with bread, arugula, tuna, vegetables and other slice.
