Ingredients
2 bulbs garlic
1/2 cup chickenstock, fatless
1/4 cup wine vinegar
2 tbsp oliveoil
2 tsp dijon mustard
salt and pepper to taste
Preparation
Preheat oven to 200C/400F. Slice of top of bulb of garlic and remove some of the papery skin. Leave cloves!
Fold garlic in tinfoil and drizzle with some oil, close fil and roast about 40 minutes until soft.
Leave to cool and press out garlic.
Mix garlic with stock, vinegar, oil and mustard. Whisk well and bring to taste with salt and pepper.
Keeps 2 days in the fridge.
