Ingredients
10 cloves garlic, unpealed
1 cup white wine
1 sprig each rosemary and thyme
1 shallot, chopped
6 pepper corns
1 1/2 cup cream
1 tbsp butter
Preparation
Rub garlic with oil and roast in oven for about 30 mins at 180C/380F until soft.
Squeeze garlic from skin and mash. Add wine, thyme, rosemary, shallot, pepper corns to pan and bring to boil, simmer until reduced to about 3/4, add garlic and cream, reduce again until half, add butter and bring to taste with salt and pepper.
To serve stir in some freshly chopped parsley.
Serve as base for a pasta sauce or as a sauce with grilled beef.
