Recipe for a gigantic party sandwich with pesto and roasted peppers.

Ingredients

1 1/2 pnds roast beef
1 large round loaf, about 1 foot in diameter
1/2 cup mayonaise
3 tbsp pesto
1 tsp fresh lemon juice
2 roasted red peppers, skinned
1 small bag lettuce
about 1/4 pnd feta, crumbled
salt and pepper to taste

Preparation

Slice bread in half. Mix mayo with pesto and lemon juice. Spread sauce on both halves.

Spread roast beef, peppers, lettuce on bottom half, sprinkle with salt and pepper to taste. Top with top half of bread and cut in nice wedges.

Nice party dish or for a lunch party.
