RECIPE LETTUCE SOUP

Recipe for Flemish lettuce soup, to be prepared in microwave.

Soups from Belgium for 4 persons, suitable for for christmas and other holidays.

Ingredients

  • 1 cube butter
  • 1 onion, chopped
  • 1 head butter lettuce, chopped
  • 1 pckge boursin
  • 4 cups chickenstock, hot

Preparation

Use a microwave proof large bowl, 2,25 l. Put in butter and onion. Microwave for 2 minutes on high.

Add lettuce and nuke for another minute.

Add hot stock and add boursin. Nuke for 5 minutes and stir well to mix the cheese in stock.

Serve.
