RECIPE EGG DROP SOUP

Recipe for the famous chinese Egg drop Soup, it looks kinda funky with those floating egg flakes but it tastes delicous....

Soups from China for 4 persons

Ingredients

  • 2 eggs
  • 4-6 snowpeas
  • 1 green bellpeper, sliced
  • 1-4 tsp grated ginger (to taste)
  • 1 tsp dried parsley
  • 1 clove garlic, minced
  • 1 cup of your favorite noodles
  • 5 cups chicken stock
  • some sliced cooked chickenbreast (maybe marinated in teriyaki)
  • 1-2 tsp flour, to thicken
  • 1/2 cup sliced mushrooms/shitakes

Preparation

Heat stock and add garlic, ginger, parsley and noodles, bring to a simmer. Keep it at boilingpoint then stir so a swirl forms and pour in eggs, then stop stirring. This will form the egg 'threads' in the soup. Add other veggies and chicken and thicken as needed.

For a little kick add some chilipaste.

Serve with egg rolls.
