Ingredients
2 large pork tenderloins
10 cloves garlic, minced
2 tbsp rosemary
2 tsp black pepper
2 tbsp oliveoil
salt to taste
1/3 cup roughly chopped carrot
1/2 cup chopped celery (root)
1/2 cup potato cubes
1/2 cup shallots
1/3 cup cantharelles
1 tbsp oliveoil
2 tbsp thyme
1 cup strong stock/demi glace
Preparation
Marinate pork for at least 4 hours in oliveoil, rosemary, pepper and salt.
Saute vegetables, except cantharelles, in some oil. Add thyme and bring to taste with salt and pepper, add stock and simmer until done.
Grill tenderloin until done and leave to rest for 5 minutes, slice.
To serve drain vegetables and arrange pork on top of vegetables.
