Ingredients
10 shallots, pealed (2 minced)
1 cup red wine
1 cup beef stock
2 cloves garlic, minced
2 tbsp olive oil
salt, pepper, sugar to taste
2 oz butter (cold)
4 ribeyes
1 egg yolk
about 50 cm tin foil
Preparation
Preheat oven to 200C/400F.
In sauce pan reduce wine and minced shallot to about half. Add stock and reduce to about 1 cup.
Slice other shallots lengthwise and arrange on tin foil, sprinkle with some oil, salt and pepper and garlic. Close package and roast in oven for about 25 minutes.
Melt butter in pan, sprinkle steaks with salt and pepper and pan fry for about 8 minutes (turn half way) or until done to your liking.
Whisk egg yolk in sauce and off heat keep whisking. Bring to taste with salt and pepper.
Use warm plates and arrange meat on plates, divide shallots and drizzle with sauce.
Serve with steamed broccoli and cooked potatoes.
