Ingredients
1 cup stock
3 tbsp brandy
1 tsp dijon mustard
3 oz. butter
6 lambchops
1/2 tsp grain mustard
tin foil
salt and pepper to taste
Preparation
Reduce stock, brandy and mustard to about 3/4.
Melt 2 oz butter in pan and sautee chops for about 5-6 mins, until pink. Turn halfway, sprinkle with salt and pepper. Take out and keep warm in tin foil.
Scoop out fat and pour in sauce, cook on high heat for a few minutes and scrape bottom of pan. Take of heat and stir in the rest of the butter and other mustard.
To serve arrange chops on plate and drizzle with sauce.
