Ingredients
Herbed Mustard Vinagrette
1 tsp garlic, minced
2 tsp shallots, minced
2 tsp dijon mustard
1 1/2 tsp dried oregano
2 tsp dried parsley
1/2 tsp freshly ground pepper
1/4 tsp salt
1/4 cup red wine vinegar
1 1/2 cup oliveoil
3 tbsp grated parmesan
Salad
1/2 iceberg lettuce, in bitesize pieces
1/2 roman lettuce, in bitesize pieces
12 large basil leaves, ripped to pieces
1/4 pnd italian salami, choppped
1/2 pnd grated mozzarella
1 can garbonzo beans
2 pnds tomatos, seeded, skinned in strips
1 pnd turkeybreast, in strips
2 tbsp spring onion, chopped
Preparation
Dressing
Mix all ingredients for the dressing except the oil and parmesan. Mix well, pour in blender and drizzle in oil to get a nice dressing. Stir in parmesan. Keep in fridge.
Salad
Toss first 6 ingredients and the dressing, not too much dressing until seasoned. Divide lettuce over the necessary plates and arange turkey and tomato on top. Finally sprinkle with spring onion.
