Recipe for the famous Caesar Salad, lots of variation possible and to make it a full meal serve with grilled shrimp, steak or chicken and some roasted bread.

Ingredients
1 cup Roman lettuce, torn to pieces\
6 ansjovisfilets, chopped
1/2 cucumber, in strips
1/4 pnd smoked salmon, in strips
1/4 pnd grated parmesan
some sprigs of basil, parsley
Dressing
3 tbsp whitewine vinegar
3/4 cup oliveoil
salt pepper to taste
2-3 ansjovisfilets, mashed to a paste
1 tbsp mustardpowder (Colmans)
1 tbsp dijon mustard
1 tbsp mayonaise
2-3 tbsp chopped fresh herbs (basil, parsley, chives)
1 tbsp freshly grated parmesan
Garlic Croutons
2 thick slices of bread in large cubes
3-4 tbsp oliveoil
1-2 cloves garlic, minced
Preparation
Prepare dressing by mixing all ingredients well, let sit for a few hours.
Croutons
Preheat oven to 180C/380F. Drizzle bread cubes with oil and toss with garlic. Roast in oven for about 10 minutes until crispy.
Salad
Toss salad with some of the dressing, divide ansjovis, cucumber, salmon, croutons and cheese. Serve with herb sprigs.
