Ingredients
Marinade for 6 chicken breasts
1/2 pnd brown suager
1 cup soy
1 cup sherry
3 cups pineapple juice
1/2 cup red wine vinegar
1 tsp garlic powder or fresh garlic
1/2 tsp ginger powder
Dressing
1 cup oliveoil
1 cup red wine vinegar
1 clove garlic, minced
1 tsp salt
1 tsp black pepper
1 tsp dried oregano
1/4 cup sugar
4 tbsp dijon mustard
6 chickenbreasts
Salad per serving
1 hard boiled egg, crumbled
2 oz. bacon, crumbled
8 croutons
3 tomato parts
Preparation
Marinade
Mix all ingredients in a large dish, use enough to cover the chicken, keep the rest in a container.
Dressing
Mix all ingredients in a blender and blitz until a nice mixture forms. Use whats needed, keep the rest in a container.
Marinate chicken at least 3 hours. Pad chicken dry and grill until done, slice in strips.
Arange lettuce, egg, bacon, tomato, croutons over plates and the warm chicken on top.
Serve with the dressing on the side and some bread.
