Ingredients
4 single chicken breasts, flattened
4 tbsp oliveoil
2-3 tbsp dijon mustard
1 clove garlic, minced
1 large ciabatta
1 tsp lemonjuice
some chives chopped to garnisch
salt and pepper to taste
For the salad
2 oz fresh spinach
1 bunch watercress
1/2 head of raddichio lettuce
4 tbsp mayo
1 tbsp dijon mustard
Preparation
Mix oil with garlic and mustard, rub this on the chicken and season with salt and peper and marinate for a few hours.
Toss everything for the salad together with some extra oil and lemon juice. Mix mustard and mayo and keep aside.
Slice ciabatta lengthwise and divide for four, grill inside until golden or use bbq.
Grill chicken until done, preferably on bbq.
Prepare sandwich with bottom part of ciabatta, brush with mustard mayo, add some salad, the chicken and some more lettuce and garnish with chives. Top with top part of ciabatta.
