Ingredients
600 grams beef, cubed (a littly fatty)
2 yellow bell peppers, chopped rougly
1 chili, chopped (remove seeds for less spicy stew)
4 red onions, each divided in 8 pcs.
50 gr. butter
2 tbsp tomato paste
1 beef stock cube
1/4 cup cream
500 gr. sweet potatoes, cubed
3 tbsp selery leaf, chopped
Preparation
Heat butter in large pan and saute until browned, keep heat high until all water is gone.
Add bell peppers, onion and chili and saute another 5 minis.
Add 1 1/2 cup water and the tomato paste, then the stock cube, cream and bring to a simmer.
Put a lid on the pan and simmer for about 3 hours. After 2 hours add potato and simmer for last hour.
Before serving sprinkle celery on top.
Serve with rice.
