Ingredients
Marinade
6 tbsp oliveoil
1 tsp chopped garlic
1 tsp rosemary
12 cooked, pealed, large shrimp sliced lengthwise
6 tbsp oliveoil
2 tbsp lemon juice
1 clove garlic, minced
1 tsp parsley, chopped
about 1/2 pnd arugula/rocket
handfull black olives, sliced
2 tbsp capers
2 oranges, in skinless segments
Preparation
Marinate shrimp in a bag for 2-4 hours in the fridge, then leave to drain and come to room temperature.
Mix oil, lemonjuice, garlic, parsley and salt and pepper in a large dish. Add arugula and toss to coat. Add olives and capers.
Divide salad over 4 plates and divide shrimp over plates. Finally garnish with orange segments.
