Ingredients
1 mango, skinned and sliced in strips
2 small ripe tomatoes, skinned, seeded in strips
1 sundried tomato, in oil, in strips
1 sprig cilantro, coriander, chopped
2 guinea fowl filets, with skin
1 tbsp oliveoil
freshly ground pepper
1 bunch arugula
1 tbsp sesameoil
1 tbsp limejuice
1 tbsp soy
3 tbsp sweet white wine
Preparation
Grill guinea until done and slice in strips.
Divide arugula over 4 plates, divide mango, cilantro and tomato over them.
To prepare dressing, warm sesameoil and sundried tomato, stir in lime, soy and wine and bring to a simmer. Take of heat and let cool.
Divide guinea fowl over plates and drizzle salad with dressing.
Serve with crusty bread.
