RECIPE GRILLED VEGETABLES SALAD WITH PARMESAN

Salad dishes from Italy for 8 persons, suitable for on or with a bbq dish, for christmas and other holidays.

Ingredients

  • 1/4 cup olive oil
  • 1/2 tsp chili flakes
  • 2 eggplants, halved lengthwise
  • 1 red bellpepper, halved lengthwise, seeded
  • 1 small red onion, in thin rings
  • 2 zuchinnis, halve lengthwise
  • 1/4 pnd parmesan
  • 1 carrot, grated
  • 1 celery stalk, sliced thinly
  • 1 head raddichio, chopped
  • 1/4 pnd frisee lettuce, bitesize
  • Lemon Oregano Dressing (recipe follows)

  • 1 shallot, minced
  • 1 tsp dijon mustard
  • 1 tsp choppped oregano
  • juice of 2 lemons
  • 1/2 cup olive oil

Preparation

Dressing
Mix all ingredients and half the lemon juice, whisk in oil slowly and add the rest of the juice. Bring to taste with salt and pepper en maybe some tabasco. This can also be done in a blender.

Preheat grillpan or bbq. Mix oil with chili flakes and brush vegetables with oil mixture. Grill the vegetables about 2-3 minutes each side. Leave to cool.

Shave parmesan in thin strips. In a large dish toss vegetables with other ingredients and drizzle with dressing. Toss to coat.

To serve sprinkle with parmesan and fresh crusty bread.
