Ingredients
1 tsp sunflower oil
3 shallots, chopped very finely
4 oz soft unsalted butter
1 tbsp black peppercorns, roughly crushed in mortar
1 tsp dijonmustard
1/4 tsp salt
Preparation
Saute shallot in oil on low heat until softened and golden. Leave to cool.
Mix with butter with the other ingredients and form this in a roll in some cling film. Leave to cool in fridge.
Serve on grilled meat. Slice of cold from roll and let melt on hot food.
