Recipe for a fancy Honey Thyme sauce, use warm with a grilled pork loin or steak.

Ingredients
1 tbsp butter
1 tbsp honey
4 tbsp vinegar
4 tbsp white wine
1 tbsp fresh thyme leaves
2 3/4 cup veal stock
2 oz. cold butter
Preparation
Saute in sauce pan, butter and honey and let caramelize slightly, then add vinegar and white wine and reduce to half. Add thyme and stock and reduce to 1/3. Take sauce of heat and strain. Warm sauce again and of the heat whisk in the cold butter.
Keep warm and serve drizzled around meat.
