Ingredients
1 cup risotto rice
1 cup grated parmesan
10 grams porcini, soaked in hot water
1 clove garlic, minced
1 onion, chopped
1 tbsp butter
salt, pepper to taste
1 porcini stock cube, dissolved in about 1 1/2 pints hot water
Preparation
Soak porcini for 30 minutes in some hot water, strain but keep liquid and porcini. Cut porcini up.
Saute onion, garlic and porcini in some oil for 2 minutes. Add rice until its glaced.
Add 1/3 of the stock and keep stirring while its evaporating on medium high heat. Keep adding stock. When the risotto is just about done add the porcini liquid and stir until most liquid is gone.
Finally stir in parmesan en bring to taste with salt and pepper.
Serve with bread for lunch or to make a meal a nice piece of fish and some stirfried aspergus.
Tip: stir in, together with the parmesan, some truffle oil or trufflepaste.
