Ingredients
1 farmers chicken, 3 pounds
butter
1 1/2 bottle of red wine
3 bay leaves
5 black pepercorns, crushed
3 small onions, chopped
1 large carrot, chopped
2 cloves of garlic, chopped
1 sprig of thyme
pepper and salt to taste
3 tbsp butter
10 celery stalks (just the leaves!), chopped
8 tbsp vegetable oil
40 small sjalots
5 ounces chopped bacon
Preparation
Cut up the chicken and saute the pieces until brown on all sides.
Take out the chicken and add the chopped vegetables and herbs (except celery!), saute for about 5 mins then add the wine bring to a boil and lower the heat. Add the chicken and let it simmer for about an hour.
Take out the chicken and reduce the sauce for about 20 mins, take out the vegetables and herbs and filter the sauce with a sif. Take of heat and add butter and celery leaves. Add salt and peper to taste.
Saute sjalots in buttter with bacon until done, add to sauce.
Add chicken to sauce.
Serve with boiled potatoes and mixed salad.
