Ingredients
16 scampi, cleaned with the tail on
6 tbsp soy
1 clove garlic, minced
3 tbsp ketchup
1 tbsp cilantro, chopped
1 tsp curry powder, mild
1 tsp fresh ginger, grated
1 pnd green onions, thinly sliced
1 pnd bok choy leaves, roughly chopped
2 tbsp oliveoil
1/2 pnd beansprouts
3 tbsp white wine
Preparation
Mix soy, garlic, ketchup, cilantro, curry and ginger and marinate scampi in this.
Take scampi out, after 30 mins, drain and pat dry. Keep marinade aside.
Stir fry scampi in wok with oil for 4 mins, take out and keep warm. Stir fry greens in remaining oil and bring to taste with salt and pepper.
Heat marinade with wine and thicken if needed.
On a plate first divide greens, then scampi and then drizzle with sauce.
