Ingredients

1 cup fish stock
a few sprigs saffron
1 lime
1/2 cup corn oil
salt, pepper
4 good, ripe tomatoes, skinned, seeded and cubed
4 shallots, minced
2 cloves garlic, minced
2 tbsp butter
4 small salmon fillets, 1/4 pnd each

Preparation

Reduce stock to about 1/4 cup and add saffron, leave to cool. Squeeze lime in stock and whisk to a dressing with 5 tbsp oil, bring to taste with salt and pepper.

Heat the rest of the oil and saute garlic, shallot for a minute or so. Take of heat and add tomato cubes, bring to taste with salt and pepper.

Sprinkle salmon with salt and pepper. Pan fry salmon until you liking and flake in large pieces. Drizzle with 2-3 tbsp of dressing on a hot plate and serve.
