Recipe for one of my favorite pieces of beef, Ribeye. Great with a baked potato and the sauce is delicious.

Ingredients

1 1" thick Ribeye
2 tbsp garlic, chopped
2 tbsp parsley, chopped
1/2 tsp fresh ground pepper
1 small bottle of beer, get a good microbrew
1 tbsp + 1 tsp oliveoil
1/4 cup chickenstock
salt to taste
2 tbsp spicy honey mustard

Preparation

Pat ribeye dry. Mix garlic, parsley, pepper and beer. Marinate beef for 4-8 hours. Take out and pat dry ribey. Strain marinade and add stock to marinade, bring to a boil and reduce to about half a cup.

Grill ribeye on gridle or bbq to your liking, sprinkle with salt and pepper and keep warm and leave to rest for a few minutes.

Stir mustard in sauce and thicken if needed. Bring to taste with salt and pepper.

Slice ribeye in thin slices and drizzle some sauce around.
