Ingredients
1/2 pnd flat rice noodles (or thin noodles)
6 tbsp peanut oil
1 tbsp chopped garlic
6 tbsp fresh limejuice
2 tbsp fishsauce
2 tbsp rice wine vinegar
2 tbsp sugar
1/2 pnd beansprouts
2 springonions, sliced thinly
2 birdseye chilis (or to taste) finely chopped
Preparation
Prepare noodles according to package.
Heat oil in wok, add garlic and stirfry 1 minute. Add noodles and make sure the noodles don't stick (this can be assured by preheating the wok). Then add juice, fishsauce, vinegar and sugar. Stir well and add sprouts, chili and spring onion. Heat through and serve.
Extra condiments are roughly chopped peanuts, strips of cucumbar, cilantro, omelet strips, etc.
