Ingredients
2 pnds medium potatoes, rubbed and cleaned. Use fork to prick the potato.
2 tbsp melted butter
1 tsp soy
Preparation
Preheat oven to 350F/180C. Roast potatoes for about 45 mins. Take out and let cool.
Halve potatoes and take out most of the soft stuff, the skin should be about 1/4" thick.
Heat oven to 400F/250C.
Use a brush to brush melted butter and soy on skins. Roast for about 10 mins and sprinkle with sea salt and serve with your favorite dip.
Variation
Sprinkle 'boats' with cheddar and small pieces of bacon. And let melt.
