Ingredients
1 1/2 pnds chickenpieces with skin
1 ounce butter
1/4 pnd garbonzo beans, soaked overnight, (or 1 can of 1 pound)
2 onions, chopped
1 package saffron, soaked 1 tbsp hot water
1 tsp gingerpowder
1 1/2 tsp cinnemon
6 tbsp chopped parsley
1/4 pnd roasted almonds
salt and pepper to taste
Preparation
If using soaked then cook beans in soakingwater with some salt for about 1,5 hours, until done.
Rub chicken with ginger, cinnemon, pepper and salt. Melt butter and saute chicken until golden, add half the onions, add saffron and 1/2 cup hot water. Leave to simmer for about 30 mins. Add the rest of the onions, beans, almonds and 4 tbsp parsley. Leave to simmer for another 10 minutes. Sprinkle with rest of parsley.
Serve with couscous or bulgur and a salad.
