Ingredients

1 cup hot water
1 ounce dried morielles, cleaned

2 chickenbreasts
1 tbsp oil

1 large onion, minced
2 cloves garlic, minced
1 tbsp fresh thyme, minced
1 1/2 cup chickenstock
1/4 cup madeira
1 tbsp flour

Preparation

Cover morielles in hot water and leave for about 35 mins, then strain, keep fluid!!! and chop morielles.

Preheat oven to 200C-380F. Sprinkle chicken with salt and pepper and fry chicken on all sides and then leave in oven until done, about 15 mins.

Saute onion in chickenpan and add garlic and thyme, about 5 mins. Add morielle fluid and reduce to a few tbsp. Add stock and reduce again until about 3/4-1 cup. Thicken with flour or cold butter.
