Ingredients

1 duckbreast
sobanoodles, enough for 2
1 bunch parsley, chopped
2 leeks, finely sliced
1 oz. ginger, grated
shishimi togarashi to taste
some oil

Stock
3 cups dashi
5 tbsp sake
5 tbsp mirin
6 tbsp soy

Preparation

Heat stock and simmer with soy, mirin and sake.

Saute duck and slice in thinb strips.

Cook noodles according to package.

Add ginger to stock with parsley and leek. When leek softens add duck and serve.

Divide noodles over 2 plates and sprinkle with shishimi. Serve with stock on the side to dip.
