Ingredients
2 ripe avocados
1 can of crab
2 ounces pistachios, pealed
1 ounce unsalted peanuts
1 red grapefruit
1 large orange
1 lemon
3/4 cup creme fraiche
1 tbsp rum
0,5 tsp cayenne pepper
salt to taste
Preparation
Leave some pistachios and peanuts for garnish.
Grind rest of pistachios and peanuts, not too fine!
Drain crabmeat. Mix meat with cremefraich, grind nuts, lemonjuice and cayenne. Bring to taste with salt.
Half avocados en take out pit. Take out 4 'balls' with a melon scoop. Sprinkle avocado with lemon juice.
Clean grapefruit and orange and slice out segments with out skin.
Divide grapefruit and orange segments over 4 plates. Lay 1 half avocado on each plate and fill with crabmeat. Garnish with left over nuts.
