RECIPE TURKEYBREAST WITH MUSTARDSAUCE

Poultry dishes from The Netherlands for 2 persons, suitable for for christmas and other holidays.

Ingredients

  • 1/3 pnd turkeybreast, sliced
  • 2 tbsp oliveoil
  • 1 clove garlic, minced
  • juice of 1/2 a lemon
  • 2 tbsp mustard
  • pepper and salt to taste
  • 1 bunch fesh tarragon
  • butter
  • 3 tbsp creme fraiche
  • 2 tbsp madeira
  • 0,5 tbsp thai fishsauce

Preparation

Mix garlic, oil, lemon juice, mustard, salt and pepper and 1 tbsp chopped tarragon. Marinate turkey in this. Leave overnight in fridge.

Heat oil in pan with butter. Add turkey and saute for about 4 mins. Take meat out of pan. Add some water and scrape bottom clean, add 1 tbsp mustard and stir well, then add creme fraiche, madeira and fishsauce. Stir well and finally add some more chopped tarragon.

Add meat to sauce and heat through. When its too thick add some water.

Serve with rice and french beans.
