RECIPE SINGAPORE NOODLES

Stirfried noodles with curry and chicken

Noodle dishes from Singapore for 4 persons

Ingredients

  • 1/2 pnd thin egg noodles
  • 2 tbsp oil
  • 1/2 pnd chickenbreast, cut in strips
  • 1 red chilli, seeded, in rings
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1 small onion, sliced
  • 2 red bell peppers, sliced
  • 3 spring onions, chopped
  • 2 tsp curry powder
  • 1/2 tsp cayenne pepper
  • 5 tbsp chicken stock
  • 3-4 tbsp roughly chopped roasted peanuts
  • 15 sweet basil leaves (thai)

Preparation

Prepare noodles according to package.

Heat oil in wok and stir fry chicken until done, take out chicken. In left over oil stir fry chili, garlic, ginger and onion for about 4 mins. Stir in curry and cayenne and add chicken, heat through and add noodles. On high heat stir fry noodles, add stock and bring to taste with salt and pepper.

Finally add basil and stir in.

To serve sprinkle with peanuts.
