RECIPE NOODLES WITH ORIENTAL PESTO AND STIRFRIED BEEF

Fragrant noodles with lots of flavour.

Noodle dishes from China for 4 persons

Ingredients

  • 1/2 pnd flat rice noodles
  • salt and pepper to taste
  • Pest
  • 3 tbsp roasted peanuts (or more to taste)
  • 2 cloves garlic
  • 2 tbsp grated ginger
  • 2-3 red chilis, seeded
  • 20 grams mint leaves
  • 30 grams cilantro/coriander leaves
  • about 1 cup peanut oil
  • 2 tsp orange rind
  • 1 tsp lime rind
  • 1-2 tsp sesame oil
  • salt and pepper to taste
  • For the meat
  • 2 tbsp soy
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 - 1 1/2 tsp brown sugar
  • 1 pnd beef, in strips
  • 2 tbsp oil

Preparation

Cook noodles according to package.

For the pesto, pound garlic, peanuts, ginger, chilis, mint, cilantro to a paste. Add oil so a smooth mixture forms, stir in rind and sesameoil and bring to taste with salt and pepper.

For the meat, marinate strips of beef in soy, ginger, garlic and sugar. Heat oil in wok and stir fry beef until just done, about 2-3 minutes.

Serve, mix noodles with pesto and toss with meat.
