RECIPE GARLIC NOODLES WITH CANTONESE SAUCE

Noodle dishes from China for 2 persons

Ingredients

  • 3 tsp garlic, minced
  • 2 tsp sugar
  • 2 tbsp white vinegar
  • 1 1/2 tsp chili flakes
  • 2 tbsp groundnut oil
  • 1 pnd noodles, cooked
  • 1/2 tsp sesameoil
  • 1 cucumber
  • 2 tbsp chopped cilantro/coriander
  • Sauce
  • 3/4 cup water
  • 1 chickenstock cube
  • 1 tbsp sugar
  • 2 tbsp sherry or shoaxing wine
  • 1 tbsp oystersauce
  • 1/2 tsp salt
  • 1 tsp flour

Preparation

Mix chili flakes with cilantro. Wash cucumber and cut in strips.

Heat wok and oil with sesameoil, add garlic and then sugar and vinegar. Add cooked noodles and heat through and toss with cilantro mixture and 1 tbsp of sauce. Garnish with cucumber strips.

For the sauce, mix ingredients and let dissolve.

Use as stirfry sauce.
