RECIPE CHIANG MAI NOODLES

Noodle dishes from Thailand for 4 persons

Ingredients

  • 2 tbsp oil
  • 3 cloves garlic, minced
  • 3 sjalots, minced
  • 5 cups coconutmilk
  • 2 tbsp curry powder
  • 1 tbsp red curry paste
  • 1/2 pnd beef, in thin strips
  • fishsauce to taste
  • 3 tbsp sugar
  • 1/2 tbsp yellowroot (kurkuma)
  • 1 tbsp fresh limejuice
  • 1 1/2 cup water
  • about 1/2 pnd noodles (ba mee)
  • 1 springonion, chopped
  • 1 tbsp fresh cilantro/coriander

Preparation

Heat oil in a wok, stir fry garlic and sjalots for 30 seconds. Add coconutmilk, currypowder and curry paste and meat. Bring to a simmer and lower heat, simmer for about 30 minutes. Bring to taste with fishsauce, sugar, kurkuma and limejuice. Simmer for another 30 minutes. Reduce until the flavour is according to your taste.

Prepare noodles according to package.

Serve sauce with noodles and sprinkle with cilantro and spring onion.
