RECIPE THAI CURRY CHICKEN

Poultry dishes from Thailand for 4 persons

Ingredients

  • 2 tbsp green curry paste
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tsp finely shredded ginger
  • 1 bunch coriander/cilantro, chopped
  • 1 bunch thai sweet basil, just the leaves
  • 3 tbsp oil
  • 1 pnd sliced chickenbreast
  • 1 1/2 cup coconutmilk
  • 2 lime leaves
  • 2 tbsp fishsauce (nam pla)
  • a drizzle of gingersirop
  • 1 tbsp sesameoil

Preparation

Heat oil and stir fry chicken strips. Add onion, garlic and paste, saute another 3 mins, add ginger, herbs and limeleaves and milk. Lower heat en leave to simmer for about 5 mins. Add gingersirop, fishsauce and sesameoil. Taste and if needed add more fishsauce.

Serve with rice and cucumbersalad. Garnish with coriander leaves.
