RECIPE CHICKEN WITH CASHEWS

Poultry dishes from Thailand for 4 persons

Ingredients

  • 2 pnds chickenbreast, sliced
  • 1/2 pnd beansprouts
  • 1/2 pnd cashewnuts, roasted, unsalted
  • 1 chickenstock cube
  • 1 onion, chopped
  • salt and pepper to taste
  • 1 slice galangal
  • 2 tbsp cornstarch, to thicken
  • 1 green bellpepper, sliced
  • 1 clove garlic, minced
  • 1 slice ginger
  • 1/4 habanerochili

Preparation

Saute chicken with onion and garlic until golden, add salt, pepper, ginger, galangal. Leave for about 10 mins. Add cashews, peppers. After 5 mins add 1 cup water mixed with starch and stock cube. Leave to simmer for 10 mins. 2 mins before serving add beansprouts and heat through.

Serve with rice.
