RECIPE GRILLED SHRIMP WITH SAFFRON SAUCE

Recipe for grilled shrimp with a Spanish saffron sauce, beware of too much saffron!

Seafood dishes from Spain for 4 persons, suitable for for christmas and other holidays.

Ingredients

  • 1 pnd large shrimp, cleaned
  • 1/4 cup olive oil
  • 1/2 cup shallots, chopped
  • 5 cloves garlic, minced
  • 1/2-1 tbsp saffron
  • 3 cups white wine
  • 4 cups cream
  • 2 tbsp flour, dissolved in cold water
  • juice of half a lemon
  • salt and pepper to taste
  • parsley and paprika for garnish

Preparation

Grill shrimp with some oil until golden on both sides. In a saucepan add shallots, garlic, saffron and white wine, bring to a boil and reduce to half.

Stir in cream, lemon, salt and peper and simmer for 15 minutes. Stir in flour until thick enough.

Drizzle some sauce on a warm plate, in the center, arrange shrimp on sauce and garnish with parsley and paprika.

Serve with french bread.
