RECIPE STEAMED SCALLOP WITH CHILI GINGER AND GARLIC

Ingredients

  • 6 Scallops, in their shells
  • 1 red chilli, seeds removed and chopped
  • 3 cm piece of fresh ginger, grated
  • 1 tsp Sesame Oil
  • 1 garlic clove, finely chopped
  • 1 tbsp dark soy sauce
  • 2 tsp finely chopped coriander
  • Topping
  • 6 large garlic cloves, roughly chopped
  • 2 medium Shallots, chopped
  • 2 tbsp coriander leaves, shredded

Preparation

Open and clean scallops.

Mix chilli, ginger, sesame oil, garlic, soy sauce and coriander.

Divide sauce over scallops and steam for about 5-6 mins until done.

Deep fry garlic and shallot for less then a minute, until crisp, leave on some papertowels.

Mix with koriander and sprinle on scallops.
