RECIPE GARLIC SHRIMP WITH ASPARAGUS

Recipe for a starter with garlic shrimp and green asparagus.

Seafood dishes from France for 4 persons, suitable for for christmas and other holidays.

Ingredients

  • 1 pnd green asparagus
  • salt
  • 1 tbsp white wine vinegar
  • 5 tbsp oil
  • pepper
  • 1/2 head lollo rosso lettuce
  • 3 cloves garlic, minced
  • 20 large shrimp, pealed
  • 12 sprigs chives, chopped

Preparation

Clean asparagus and half them. Blanche them in salted water for 1 minute and leave to cool in the hot water.

In saucepan take 1 tbsp of cooking water (from asparagus), vinegar and 2 tbsp oil, stir well and bring to taste with salt and pepper. Stir in chives.

Drain asparagus and wash lollo rosso, cut/rip lettuce to bite size pieces and divide over 4 plates, arange asparagus on lettuce.

Saute garlic in remaining oil with shrimp until done. Beware not to burn garlic!

Divide shrimp and garlic over plates and drizzle with dressing.

Serve with bread.
